A building block for doughnuts and more

By Yewande Komolafe, The New York TimesAs a young pastry cook in the early 2000s, my 2 p.m. shift at the restaurant Tatin in Baltimore would begin with a list of doughs to prepare for the next morning.I would start with ciabatta, a wet, almost runny dough with a seemingly endless pull. It would eventually be baked off, then cut into thin slices to adorn the bread baskets. The breadstick dough, a simple but dense monster, was rolled out into sheets, sprinkled with herbs and cheese, then cut and shaped into long, skinny sticks. And then there was the brioche dough, delicate yet sturdy, prickly and requiring your full attention at every step. It was one of the first bread doughs I came to really love.I can feel awe over what I enjoy about preparing rich, shape-shifting brioche dough — the bubbling and foaming of the yeast, proof of life; the stretch of the dough after a few minutes of kneading; the way the gluten strands surround the pats of softened butter, like gloved fingers wra...

By Anthony Izaguirre | Associated PressALBANY, N.Y. — New York’s highest court on Tuesday ordered the state to draw new congressional districts ahead of the 2024 elections, giving Democrats a potential advantage in what is expected to be a battleground for control of the U.S. House. The 4-3 decision from the New York Court of Appeals could have major ramifications as Democrats angle for more favorable district lines in the state next year. PHOENIX — The Warriors head into Tuesday’s game against the Phoenix Suns with very few bright spots to soak up and plenty of issues to sort through. It’s only December, but in the standings they are on the outside looking into the playoff picture. The season is young enough that Golden State has time to situate themselves nicely in the standings with a good string of wins. But three numbers from their 10-12 start show where they’ve fallen behind and how they haven’t fallen to NBA pits yet.1. -22This Warriors team is built on the presumption that the four-time champion core can fend off age and still beat the lot. That’s meant coach Steve Kerr rolling with the same starting five that carried them to the playoffs last year: Steph Curry, Klay Thompson, Andrew Wiggins, Draymond Green and Kevon Looney. This five-man group had a +22.1 net rating that was among the league’s best, according to Cleaning the Glass, and outscored opponents by a total of...
